Early Winter Pumpkin

Carving projects continue due to the abundance of pumpkins and the lack of a marketing plan due to uncertainty in a new crop. In other words we were afraid to plan for the possibility of success.
Pumpkins that rotted or got damaged by frost are being composted or put at the edge of a new field to sprout again next spring.
Sugar pumpkins are being stored, frozen, canned and cooked. Pumpkin Kibbeh is on the list of recipes to perfect.
